Philosophy
The desert is not barren — it is discerning. Ker berries, sangri pods, dried kachri, and wild bajra grow in defiance of the heat, concentrating flavor into every grain and seed. Our kitchen treats these ingredients with the reverence of an offering, letting their character speak without excess.
Fire is the oldest language of the desert. We cook over open sigri pits, slow-burn mesquite, and buried ember beds — techniques passed down through generations of Rajasthani cooks. The result is food that carries the memory of flame: smoky, elemental, and profoundly simple.
